    Fresh Vidalia onions permeate Stripling’s Vidalia Onion Sweet Relish, making up almost three-fourths of the entire ingredients. Red peppers play a supporting role; together, the onions and peppers are a delightful coupling which is not overshadowed by the wild game taste in this recipe (see below) for Lamb Chops Dijon.

    Lamb Chops Dijon

    • 6 lamb chops

    • 1 lemon, halved

    • 3 tsp. dried rosemary 

    • 1/4 c. chopped parsley 

    • 1/2 c. Dijon mustard

    • 2 Tbsp. olive oil

    • 1 (17 oz.) jar Stripling's Vidalia Onion Sweet Relish*


    Trim any fat from lamb chops. Rub both sides of each chop with lemon juice, followed by olive oil, mustard, rosemary, and parsley. Place chops on shallow baking dish and into the oven. Cook at 475 degrees for 6 minutes, then lower heat to 350 degrees and cook at least another 20 minutes. Serve warm with a hearty dollop of Stripling's Vidalia Onion Sweet Relish. *1(17 ounce) jar of Stripling's Vidalia Onion Sweet Relish will meet the recipe requirement and leave a nice amount remaining for other uses!
